Merge fields are fields that are available to use within the template. So in the header template, you have access to these objects:

You may have noticed in some other blocks, there is a block setting to provide content when there is nothing to display. Often seen as something like a:

Person Profile Page
When the profile button is pressed, this is the page that will be pushed. Out of the box, the profile button provides the PersonGuid
through a query string parameter upon navigating to this page.
Group Detail Page
When the group button is pressed, this is the page that will be pushed. The group button passes the GroupGuid
through a query string parameter.
Workflow Page
When the workflow button is pressed, this is the page that will be pushed. This button passes the WorkflowGuid
through a query string parameter.
If supplied, a Reminder button will be shown that will display the selected page within a cover sheet.
If this setting is left blank, the Profile action button will not be shown.
